Soup's On!

 I am hereby declaring January to be soup month at our house!
It's cold outside and there is nothing I like more than a pot of soup on the stove to warm up with.
Especially after all the overeating during the December holidays, soup seems like a healthy alternative and welcome respite this month.

It just so happens that Santa brought us a slow cooker for Christmas.
Uh, make that last Christmas!
I decided it's time to learn how to use this thing!

A new cookbook would be our inspiration to get started.
We decided to begin the New Year with Chicken-Tortilla Soup.

Talk about easy.
Onions, jalapeño pepper, garlic and tomato puree in a blender.  Add chicken thighs, chicken broth and cook for 5 hours.  Shred the chicken, add corn and cook another half hour.  The soup was too thin, so I added a can of drained black beans, and tortilla strips to the soup to punch it up a bit.

We garnished the soup with cilantro, avocado and lined the bowl with tortilla chips.
Delicious, and perfect for New Year's Day!

I'm so not a cook, but I can make a mean pot of soup.
The problem is that my repertoire is slim.  I know how to make chicken soup, lentil soup and split pea soup, and that's about it.

Yesterday I made an old-fashioned 'hoch' soup Delores: lamb and pearl barley. My cockles are now warmed in the manner of my ancestors!

Delores, we are soup fans here, and tortilla soup is a regular for us. I'll try your recipe. The black-eyed pea recipe I shared is really a soup. It's delicious and the rotel tomatoes make it spicy. When we first married in the 70s crock pots were all the rage. I think we got three for wedding presents. I made many a meal in those "slow cookers". ;-)

I made chicken soup yesterday! Just seemed like a soup kind of day to me too. I don't usually use recipes, I just throw in what I have handy or what sounds good and it usually turns out just fine. A can of Rotel added to just about any soup makes it good.....:)

I could not agree more with the idea of January being soup month. I have a pot of Cheddar Broccoli in the making for dinner tonight. The Tortilla Soup looks and sounds delicious. Think that will be next week.

I love chicken tortilla soup - one of my faves! I will soon be trying a friend's recipe for corn chowder (in the Crockpot)...so if it turns out good, I will be putting it on my blog!

I have a wonderful soup recipe. I will make it up and put it on my blog soon to share with many.
That is a great looking slow cooker. Leave it out and you will be more inclined to use it.
My hubby keeps one at the cabin and they usually fill it up before they take off on their snowmobiles for the day coming home to a wonderful, hot meal.

LOVE, LOVE, LOVE that cookbook! Make the Asian Ribs pictured on the cover. They are so delicious. We've made them three times (which is a LOT of repeats for me).

Your slowcooker looks marvelous too.

In regards to coffee, I have become a huge fan of the French press. Someday soon I will have to write a blog post on it.

Shrimp, Potato and Corn Chowder
1 lb. large peeled and deveined shrimp
4 - 6 slices Thick-Sliced Peppered Bacon, coarsely chopped
1 bag (20 oz.) Simply Potatoes - Diced Potatoes with Onions or Shredded Hash Browns
2 Tbsp. flour
1 Tbsp. seafood seasoning (like Tony Chachere's)
3 c. Chicken Broth
4 c. frozen corn
2 c. ( 1 pint) half and half

Cook bacon in a large skillet over Medium-high heat until brown and crispy. Drain on paper towels. Sauté potatoes in remaining bacon drippings about 3 minutes, scraping bottom of pan to release browned bits. Stir in flour and seafood seasoning until blended well.

Gradually stir in broth; bring to a boil and simmer over Medium heat 10 to 15 minutes or until potatoes are tender, stirring occasionally. Spoon half of the potatoes into a bowl; mash with a fork or potato masher and return to pot.

Stir in cream and corn; return chowder to a boil. Add shrimp; simmer 2 or 3 minutes or until shrimp just begins to curl. Stir and season with coarse salt and pinch of ground white pepper. Ladle chowder into serving bowls; top with bacon and serve. (I also add a handful of grated cheese to the bowl before the soup)

Tyler Florence's French Onion Soup recipe is unbeatable and super easy. I'm sure I've pinned the recipe at some point, but I think I found it originally on foodnetwork.com. Won't we all be glad when this cold snap leaves Nor Cal : )
